Description
This natural-processed coffee offered by Endebess Estate in North Kenya, is initially cleaned with fresh water from the Koitobos River but is then, without any further processing, sun-dried on raised beds, which typically takes 21-35 days.
The secret of the natural process is that, unlike the washed process, the fruit remains on the bean during the drying phase. This results in interesting, more flavourful and often sweeter notes.
